Apple Croissant French Toast
Because of their flaky texture, croissants work beautifully as a French toast bread.

Prep and cook time: 22 minutes
Ingredients:
3/4 cup milk 3 eggs 1 teaspoon vanilla extract 1/4 cup biscuit mix 6 croissants, split in half 2 cups (canned) apple pie filling 1 teaspoon cinnamon 1/2 teaspoon nutmeg
Method:
In a large bowl, whisk together the milk, eggs, vanilla, and biscuit mix until well blended. Soak the croissants in the batter, about 12 minutes, turning once.
Meanwhile, warm the apple pie filling in a small non-stick saucepan. Stir in the cinnamon and nutmeg.
When the croissants are about soaked through, heat a large non-stick skillet over medium-high heat. Cook the croissants on each side until browned and puffy. Place a croissant on an individual serving plate and add some of the pie filling between the layers and then spilling out from the croissant. Garnish with fresh fruit and serve. A variation to this recipe would be to lather cream cheese inside of each croissant after toasting.
