Goat Cheese and Smoked Haddock Tarts
These tarts are wonderful when served with tea. Go ahead and try making them for your next brunch.
Servings: 8 small sandwiches
Ingredients:
1 small log goat cheese 2 tablespoons black milled pepper 1 cup olive oil 4 slices oat or other grain bread 1/2 pound smoked haddock (substitute with smoked salmon) Tomato slices Chives
Method:
Marinate the goat cheese in the olive oil and pepper for 4 hours or more.
In a medium non-stick skillet, toast the bread slices over medium heat until golden brown. Let cool. Remove the crusts. Spread the goat cheese generously on each slice of the bread followed by a piece of the haddock. Follow with a slice of tomato and chives. Cut each in half diagonally and serve.
